== Method == * Preheat your oven to 220Β°C (425Β°F). * In a large mixing bowl, sift the flour and add a pinch of salt. * Make a well in the center of the flour and crack in the eggs. * Gradually pour in the milk while whisking continuously to avoid lumps until you have a smooth batter. * Let the batter rest for at least 30 minutes at room temperature. This allows the flour to absorb the liquid and gives you a lighter pudding. * After resting, pour a little sunflower oil or beef dripping into each compartment of a muffin tin, or into a shallow baking dish, enough to just cover the base (about 1 cm or 0.5 inch deep). * Place the tin or dish in the preheated oven for about 10 minutes until the oil is smoking hot. * Carefully remove the tin or dish from the oven and quickly pour the batter into the compartments or dish, filling each about halfway. * Place the tin or dish back into the oven and bake for 20-25 minutes or until the puddings are risen, golden brown, and crispy. * Serve while hot or reheat through when ready to serve.
