Smooth and decadent French bistro style mashed potatoes inspired by late great French chef Joël Robuchon.

This recipe is for one serving.

Ingredients[edit]

  • 1 medium-sized potato (about 200g / 7 oz)
  • 2 tablespoons (30g) unsalted butter
  • 2 tablespoons (30ml) whole milk
  • Salt and pepper to taste
  • Optional: Chopped fresh herbs (such as chives or parsley) for garnish

Method[edit]

  • Peel the potato and cut it into small, evenly sized chunks.
  • Place the potato chunks in a pot of cold, salted water. Bring the water to a boil and let the potatoes cook until they are fork-tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Mash the potatoes using a potato ricer, masher or a fork until they are mostly smooth.
  • Add the unsalted butter and whole milk to the mashed potatoes. Continue to mash and mix until the butter is melted, and the potatoes are creamy. Adjust the amount of milk to achieve your desired consistency.
  • Season the pomme purée with salt and pepper to taste.
  • If desired, garnish the pomme purée with chopped fresh herbs such as chives or parsley.
